Sam Armenio

Born and raised in Australia within a vibrant community of Puglian immigrants, Chef Sam grew up surrounded by the flavors, rituals, and emotions of southern Italy. From a young age, he was immersed in the kitchens of mothers and grandmothers who preserved their culinary heritage with pride and care — making everything from scratch, the traditional way, with patience and heart. Living far from Italy only deepened Sam’s connection to his roots and his desire to honor them through food.

Today, Sam brings that heritage to life in Bangkok, at Armenio’s Modern Grand Ma — a restaurant housed in a charming traditional home, where the warmth and spirit of Puglia fill every corner. The atmosphere is intimate, welcoming, and deeply authentic. In the kitchen, Sam leads every step of the process with precision and soul. From the handpicked Italian ingredients to the slow-cooked sauces and flawless timing, each dish is a celebration of tradition and emotion.

At a deeply personal moment, Sam made a promise to his mother — to return to his roots and cook with heart. He doesn’t just cook — he communicates.
